Monday's Menu!!!

It feels like fall in my world over here. It's time to bring out the pumpkin recipes!!! Enjoy!! These are from my sister Amy and are sooo delicious!

Pumpkin Chocolate Chip Muffins
3 cups flour
1 tsp. baking soda
1 tsp. salt
2 cups sugar (that's right, sometimes you just gotta do it!!)
3 Tbs. cinnamon
dash nutmeg
2 cups pumpkin
4 eggs
1 1/4 cups oil
chocolate chips
Directions:
Put all the wet ingredients in mixer. Then put in all the dry. Add the chocolate chips. Spoon into muffin cups and bake for 20-25 mins at 350 degrees until the tops bounce back when pressed. Do not overbake.

Number of servings: 24 muffins

mmmmm....i have a pumpkin cake recipe that i will have to post soon. these sound so good. i made cinnamon rolls last night with the crescent roll recipe and sent them to work with Bob for his team. don't need any of those babies lying around the house all day... ;-) they were super yummy and very easy.
